Well Hello Monday! Hope the beginning of everyone's week is flying by after a fun weekend!
...In case you are dragging a little today, I wanted to share this great "pick me up" recipe. These
Pumpkin Energy Bites are the perfect healthy little snack. Plus, they are festive and
very easy to make!

energy and holiday season spirit! J 24

What
you will need:
1 cup canned pumpkin
1½ cups old fashioned oats
½ cup walnuts
½ cup dried dates
1 tablespoon honey
1 teaspoon cinnamon
½ teaspoon
nutmug
½ teaspoon ground ginger
To
get from A to B:
ü Coarsley chop walnuts and
dates with a large knife to size desired. I love being able to get a good taste
of the dates and walnuts, so I leave the pieces a little on the larger side.
ü In a medium-size mixing
bowl, stir all of the ingredients together until you have a consistent mixture.
ü Using a melon baller, or your
hands, form small bite- size balls and place on parchment paper. I make my balls a little on the larger side ~
2-3 bites.
ü Refrigerate for 2-3 hours.

A few notes:
ü This recipe makes about 8 –
10 energy bites
ü To store the energy bites
place them into a Tupperware and keep them in the refrigerator.
ü To achieve a consistency
you are happy with, you may need to carefully add in a small amount of extra
oats or pumpkin.
ü You can make a lot of
substitutions for this recipe. Try almonds, instead of walnuts. Add small bits
of dark chocolate or add chia or flaxseeds for an added health benefit!
