There
is no guilt in having fruit, nuts and yogurt for breakfast (or dessert)…right? J This incredibly easy Fall
recipe is one of my favorites in colder weather; and I am a huge fan of
parfaits year-round. I especially like this one because by using the pear as
the bowl for your parfait, you also get all the vitamins and nutrients in the
skin of the pear.
What
you will need:
ü 2 pears (Bartlett, Anjou
or Bosc)
ü 1/4 cup chopped walnuts
ü 2 tablespoons honey
ü 1 tablespoon cinnamon
ü 1 lemon
ü 1 cup Greek yogurt
To
get from A to B:
ü Preheat oven to 375
degrees.
ü Halve the two pears and
take a spoon or melon baller to each in order to remove the seeds from the
middle.
ü Cut the lemon in half and
give it a squeeze over the cut side up over the four pear halves
ü Sprinkle cinnamon evenly over
the halves and drizzle honey over them as well
ü Place the pears cut side
up in a pan or on a baking sheet and roast them until soft, about 25 to 30
minutes.
ü Remove from pan and place
in a bowl. Place a 1/4 cup yogurt on to the top of each and add walnuts.
