This
Fig salad recipe is extremely easy and tasty! It is one of our go-to salads
when figs are in season.
A
special note on figs (because I love them so much): Figs are not only
beautiful, and easy to cook with, they are packed full of vitamins and
minerals. They contain prebiotics and are a great source of fiber! The only
downside to these wonderful little fruits is that it’s currently coming to the
end of their season. See if you can find them in your local grocery store and
enjoy them one last time for the year!
What
you will need:
ü 4-5 cups of spinach
ü 1/2 cup Brown raisins
ü 1/2 cup golden raisins
ü 10-12 mission figs
ü 2 small pears
ü 2 ounces goat cheese
ü 1/4 cup honey
ü 2-3 Tablespoons Olive oil
ü 1/3 cup sliced Almonds

You can add more of any of these ingrediants as desired!
To
get from A to B:
ü Simply slice the stem off
of each fig and cut them down the middle.
ü Lightly drizzle honey over
the inside of the open-faced fig halves
ü Preheat your oven to 375
and place figs (cut side up) in the oven for 10-15 minutes - until fig and
honey are browning
ü Cut pears into thin slices
or cubes
ü In a bowl mix together
spinach, raisins, pears - dress with olive oil as desired
ü Mix in goat cheese,
almonds and top with caramelized figs
Serve
and enjoy!
